After losing his mother Dentist Jose Isidro inherited Fazenda Sertão and developed a modern, sustainable agricultural and family owned business. They cultivate a row of typical brazilian coffee varieties, within the famous and long established Yellow Bourbon. The yellow color of the pulp named the plant. The combination of high fertile soil, climate, altitude in the region of Carmo de Minas and the variety makes the smooth, sweet and complex flavor.
Ethiopian coffees are best known for their floral, highly complex and wide flavor range. The washed Heirloom from the Guji region is with his tangy freshness a perfect complement to the sweet and full natural brazilian.
Around 700 smallholders harvest their cherries by hand and bring their crop to the next coffee mill, where the next steps of processing take place. Washed coffees are likely more yellow in taste and have a minimum proportion of sugar.
That merge of a natural Yellow Bourbon and washed Heirloom, light roasted generates a fantastic flavor of citrus, plum jam and chocolate.
